Blueberry , Lemon Ice Cream

This instant ice cream is perfect for whipping up on a hot summer’s day.

It can be made with other frozen berries, such as strawberries or raspberries, or a mixture of all three.

Ingredients - Serves 6

250g (9oz) mascarpone

zest of 1 lemon

150g (5óoz) frozen blueberries

1 teaspoon honey (optional)

Put 6 small glasses or espresso cups in the fridge or freezer to chill.

Whizz all the ingredients together in a food processor until just smooth.

Don’t overmix or it will melt. Spoon into the chilled glasses and serve straight away.

If it does melt, serve anyway and just tell people it is a smoothie; it is still delicious!
